Global GS Series
Origin: Japan (crafted in Niigata, Japan, by Yoshikin, the makers of Global knives)
Focus: The GS Series is Global’s collection of smaller, lightweight knives designed for precision tasks. It emphasizes agility, balance, and razor-sharp performance, catering to detailed work in the kitchen such as peeling, slicing, and prep with smaller ingredients.
Craftsmanship: Each GS knife is forged from Global’s proprietary Cromova 18 stainless steel, a blend of chromium, molybdenum, and vanadium. This steel is ice-tempered and hardened to resist corrosion and maintain a long-lasting edge. The blades are seamlessly constructed with Global’s signature dimple-pattern stainless steel handles, which are hollow and filled with sand for perfect weight and balance.
Technology: Sharpened to a fine 15° edge, GS blades are thinner than most Western-style knives, ensuring precise cuts with minimal resistance. The seamless all-steel construction provides durability and eliminates food or dirt traps for easier sanitation.
Specialization: The GS Series focuses on small to mid-sized blades such as utility knives, paring knives, and vegetable knives. They are designed as complementary tools to larger Global series like the G (chef’s knives) and GF (forged) lines.
Price and Value: Positioned in the mid-premium tier, GS knives are more affordable than Global’s larger forged counterparts but still deliver high performance. They are an excellent choice for cooks who want precision and lightness without sacrificing quality.
Distinguishing Features: Cromova 18 stainless steel construction, sand-weighted hollow handles with dimpled grip, sleek one-piece stainless design, and a thinner 15° edge optimized for precision cutting.
